Cristian Tolu - Maestro Pizzaiolo
Mi chiamo Cristian Tolu e faccio il pizzaiolo da una vita. Sono nato a Maracalagonis nel 1987 e la passione per il cibo mi è arrivata da mia nonna Lucia, che preparava dolci tradizionali con una cura che ancora oggi cerco di portare nelle mie pizze.
Ho iniziato in pizzeria da ragazzo, grazie a mia madre, e dopo tanti anni di lavoro tra forni e impasti ho deciso di aprire prima la Pizzeria Brown e poi Crunch, il mio progetto più personale. Qui metto quello che ho imparato: rispetto per la tradizione, ingredienti scelti bene e tanta voglia di fare le cose con calma.
Negli anni ho partecipato a vari campionati, nazionali e internazionali. Mi hanno dato tanto: confronti, crescita, stimoli. Uno dei momenti più importanti è stato vincere il titolo di Campione del Mondo di Pizza Tonda. Un riconoscimento che porto nel cuore insieme alla nomina come Ambasciatore DOC Italy.
Per me la pizza è un modo per raccontare la Sardegna.
Dall’impasto al pecorino, cerco sempre quella semplicità che ti fa
sentire a casa.
Insieme a mia moglie abbiamo anche portato avanti piccoli progetti
utili al territorio, come la donazione di un defibrillatore al
quartiere di Flumini di Quartu.
Crunch è questo: lavoro, passione e un po’ di vita vissuta. Ogni pizza nasce così.
